cake in a cup

Ronnie's aunt, uncle, and cousin were in town last week visiting the Seattle sights. They spent Sunday with us and after dinner we decided to make "cake in a cup". I found the recipe here and it worked great. (It calls for cake flour but I just used all-purpose and it worked just fine.) We sprinkled chocolate chips on top of the batter and it was yum!
It is a must do activity if you have kids, mine loved every min. of it. I let them pull up a chair and fry some brain cells while watching it cook in the microwave. The cake rose up above the mugs and the kids laughed and yelled thinking it was going to topple over. It looked like it might but it never did. It gets up there pretty high and then shrinks back down after the microwave stops. It wasn't my favorite tasting chocolate cake, but for being made in a mug, in the microwave, in 3 min., it was pretty darn good. We just plopped some ice cream right on top and dug in.

The key would be the 3-minute part. I got this recipe that sounds the same from a friend and made a bunch of cute Christmas mugs to give to all my friends... but it said it was a 5-minute cake. No... 5 minutes equals overdone cake, overflowed-cup and big mess in the microwave. We'll have to try that for FHE. Fun idea! But then again, I'm not surprised. You always have cute, fun ideas!

How funny. My mother-in-law just emailed us the same (or very similar) recipe. Like you said, it's not the most amazing chocolate cake you'll ever have but it's a fun activity and the kids loved it!
